Recipe: (4 people). At your green-grocer get the following: 1 zucchini, 1 eggplant, 1 sweet potato, color blend of bell peppers and some mixed dried mediterranean herbs (basil, parsley, thyme, rosemary, etc.), a high quality olive oil and sea salt. Preheat the oven to 200 degrees Celcius. Baking paper on your oven tray, cut all vegetables into large pieces, making sure the vegetables that have a shorter cooking time (like zucchini) need to be bigger than the vegetables with longer cooking time (like the sweet potato). Put all sliced vegetables in a large bowl, sprinkle with olive oil (1-2 tbs), add the dried herbs and sprinkle the sea salt. Mix it all so that the oil and herbs are nicely distributed around the veggies, then put it all on the oven tray. Cook for 25-30 minutes until the veggies are nicely browned by the heat of the oven. Delicious as side dish next to for example grilled chicken or roast beef. Enjoy!
