Quinoa & Mackerel Salad!

Recipe: (3-4 persons). Provide the following ingredients in your kitchen; 1 smoked mackerel, 100 grams of uncooked quinoa (mix), 1 green pepper, 1 chicory, 40 grams of arugula, 1/2 block of feta cheese, 1 tbs sunflower seeds. prepared the quinoa according to specifications (cook 8 minutes with a pinch of salt), allow it to cool down. Get rid of the mackerels’ skin and bones, head and tail. Cut the green bell pepper into pieces, the chicory in half (lengthwise), remove the bitter heart and cut lengthwise in small long slices. Cut the feta cheese into small cubes. Take a nice large plate, put first a little rocket salad (arugula) in the middle of the plate, on top a cup of cooked quinoa mix. Over the top some diced green bell pepper, feta cheese cubes, sliced ​​chicory and some pieces mackerel. Finish off by dropping some sunflower seeds on top. Pepper&salt and olive oil to taste. Enjoy your meal!
