Zeeuwse bolussen! Typical Dutch cookies!

Recipe for 10 big ‘bolussen’; preheat the oven at 225 degrees Celcius! Take 500 gram (spelt) flower, 15 gr. sugar, 1 egg, 10 gr salt, 50 gr yeast, 50 ml (lactose free) milk, 215 ml water, 25 gr butter. About 150 gr brown sugar, 4tbs cinnamon. Use a kitchen machine to make the dough. Put flower, yeast, sugar, water, salt, egg and milk all together and start to mix it. After 2 min. Add the butter. Let the machine work for about 6 minutes. Get the dough out of the machine and work it with your hands till it is not sticky anymore. Divide in 10 equal pieces, roll till buns and let them rest for about 20 minutes. Prepare on a plate the brown sugar mixed with the cinnamon. Roll the buns into a long ‘snake’ shape and roll it into the sugar mix, covering it completely! Roll it into a knot, so you get the classic ‘bolus-shape’ . Put them on a oven tray with bakingpaper, and cook them in the oven for about 7-9 minutes only! Enjoy it!
