Mixed salad with bean sprouts

Recipe (2 persons); Start to pick out of your fridge the following: arugula (50g), 10 green olives, 1 tbs pine nuts (raw, to be grilled), 1 cup fresh bean sprouts, 2 tomatoes, 20g feta cheese, 1 yellow bell pepper.
Make sure you wash&clean everything well before you start building your salad!
Take two bowls or deep plates and fill the bottom with plain rocket salad.
Take the yellow pepper, cut into pretty small cubes and divide them over the plates/bowls. Do the same with the feta cheese. The tomato can be cut into wedges and each served on a plate/bowl. Divide the bean sprouts also between the 2 servings and finish the salad off by roasting the pine nuts in a small pan, drop them into the salad-bowls, even when they are still hot. With a dressing of olive oil, balsamic vinegar, salt & pepper, will make this a great lunch on a hot summer day. Of course this can also be served as a side dish at dinner time! Enjoy!
