Saturday I usually go out and get fresh fish! Today I made one of my favorite shrimp-dishes!
Recipe; (3 persons) be sure you have 150gr. rice noodles , 150 gr. fresh shrimps, 1/2 zucchini, some fresh tomato saus (or get a can with plain tomato chuncks), fresh chili, parsley, a pinch of salt and a pinch of sugar.
Chop the zucchini into small chunks and put them with a little olive oil in a pan to fry, add fresh tomato-parts or the chunks from the can and let them simmer together. Add the fresh chili to taste, the pinch of salt and sugar. Let the saus simmer for about 12-15 minutes till it gets slightly more creamy and thick. This is the moment you have to let the fresh shrimps take a dive into the saus, let them cook about 5 minutes on low heat till they tender. Meanwhile you prepare the rice noodle according the description. If you like the noodles to be ‘al dente’ then just find out how long you want to cook them! Mix the saus with the noodles and serve it with some chopped parsley on a plate. (slice of lemon to squeeze it on the food is always a nice and fresh welcome!). Enjoy your dinner!
