Grilled king prawns & quinoa salad

Grilled king prawns & quinoa salad!
Recipe, (2-3 persons). Make sure you have the following items in your home;
6 fresh prawns (from the local fishmarket for example), 1 orange, 1 lemon, 1 red bell pepper, 1 yellow bell pepper, some arugula salad (50gr), quinoa seed mix (70-100 gr.), a grill pan, and be sure there is a person you’d loves to taste this great dish you’re going to make! 😉

Cook the quinoa and let it cool down for a while.
Wash and cut the peppers into small cubes.
Take a few nice deep plates and fill the bottom with arugula salad. In the middle 2-3 tbs with quinoa (build a small mountain of quinoa, sprinkle the diced bell peppers over the top of it.
Wash and cut the lemon and orange half through the middle. One half can be cut into slices, as a garnish on the plates, the other half you can squeeze them during grilling on top of the prawns so that the fruit juice will evaporate during the preparation of the prawns.
Preheat grill pan on your stove on high heat so the pan is very hot. Put the raw fresh prawns on it and grill on both sides for a few minutes until tender. Halfway the grilling process you can squeeze both half orange and the lemon over the prawns.
Place 2 grilled prawns along the border of the plate and serve with a slice of lemon and orange. Add olive oil, salt & pepper to taste! Enjoy!
