Grilled veggie omelet

Grilled veggies omelet!
(Recipe for 2 people)
Take 4 eggs, 1/2 zucchini 1/3 eggplant, fresh basil leaves, parsley or other fresh herbs, (coconut) oil for frying. Cut the zucchini in thin slices (2/3 mm) and grill it on a grill-pan without oil. Cut the eggplant in slices of 5mm, grill it on a grill pan as well. Beat the eggs together with the fresh parsley until you get a smooth foaming creamy egg. Then heat some (coconut) oil in a pan, add the egg mixture, lower the heat till LOW and carefully let the grilled veggies drop on top of the egg, put some fresh basil leaves on it and then cover with a lid and simmer on low heat cook for approximately 5/7 minutes . If the omelet gets ‘dry’ on top it is the right time to turn the omelette, after 1/2 minute it will be ready to serve..or let it cool down and add it to your take-a-way lunch box for a healthy and great lunch!
