Brill in the oven!
Recipe (3/4 persons)
Go to your fish dealer and ask him for a whole brill.
You can ask him to remove the organs and clean the skin, but you can even prepare it just right from the sea, without doing anything.
Preheat oven to 180 degrees Celsius, put the brill on a oven tray with baking paper! Just like this you can put it in the oven for 30/40 minutes (this time is valid for 1.5kg brill..by more weight over time extend the baking time). No need to add any oil or seasoning. After 30/40 minutes get your brill from the oven, pull off the crispy skin and the beautiful white cooked fishmeat can be pulled off the bone easily. This fish has firm big bones, so it is easy to get the meat of the bones! Finishing touch; a drop of high quality (italian) olive oil and chopped parsley (for those who do support garlic (not so FODMAP-friendly); it is amazing to drain some fresh garlic with the parsley in the olive oil, in a small cup, while the fish is cooking..oil will get all the flavors, it’s lovely! Normally this fish is zoo tasty you don’t need to add salt or pepper! Enjoy it!
