Zucchini Soup!

Zucchini soup! Recipe (2 persons).
Before you start make sure you have a couple of things ready in front of you; 1 zucchini, 1 sweet potato, 1 veggie-stock cube (or homemade fresh broth), 1/2 liter of water, 2 fresh eggs, a hand-blender, 1 tbs of sunflower seeds, 1 tbs of pine nuts, fresh parsley, fresh basil. Start by washing and cutting the zucchini and sweet potato into big chunks. Put them in a pan with the water and the stock cube and bring it to boil. Once the water is boiling put it on low heat and let cook for 45 minutes. Then blend it all with the hand blender until you get a smooth creamy soup…if it turns out too thick, don’t worry, you can always add some more water and give it the thickness you like. Boil 2 eggs in a separate pan, rinse under cold water and cut in half. Put them in a deep dish, pour the soup and decorate the plates with a few seeds, pine nuts and fresh herbs. This is a healthy and easy way to make a fresh soup, hope you’ll love it!
